Scd help--need to stop losing weight.

For more info on SCD, check out www.breakingtheviciouscycle.com . BTVC is the SCDer's bible.
SCD is a very draconian diet, but if followed METICULOUSLY, I.e. no cheating whatsoever, people see amazing results, B"H.

Ok mummiedearest, here goes crispy crunchy crackers:
6 eggs
1/2 t salt
1/8 c oil
1 1/2 t honey
7 c almond flour

Beat eggs on #1 on mixer. Slowly add rest of ingredients till you get a claylike consistency.
Divide dough in 4 equal parts. Roll each part between 2 baking sheets. It should be very thin. cut into strips like flat breads bake at 350 for 8-10 minutes.
BTW you really gotta keep an eye on them you want it lt brown not burnt

Here are the two brine/pickling recipes that I have.
Typing it here, before I lose the recipes.
Edited to add: these are not SCD recipes. Use these as a base, and substitute the illegal ingredients for SCD legal ingredients.

#1
Brine:
6 cups water
2 cups lager beer
1-1/2 cups coarse Kosher salt
1 cup packed light brown sugar
1-1/2 Tbsp Insta Cure (optional) - this is the stuff that keeps the meat red
1/4 cup pickling spice

1 (6-8 lb.) flat cut beef brisket

Pour water and beer into a large and deep roasting pan.
Add salt; stir until dissolved. Add sugar; stir until dissolved. If desired, add insta cure. Mix in pickling spices.
Pierce meat all over with tip of a small sharp knife.
Submerge brisket in liquid, then top with a heavy patter to weight it down. (Needs to be totally submerged in brine. Can use 10 lb. plastic container instead of pot and heavy liquid, if meat is totally submerged.)
Cover and refrigerate for 4 days.
Remove from brine. Stir liquid to blend. Return brisket to brine, and top with heavy platter. (Basically "turning" the meat.)
Refrigerate for another 4 days.
Rinse with cold water.
Okay to leave in refrigerator as is, as in rinsed, for another 2 days.

Cook.

#2
Brine:
4 quarts water (16 cups)
2 cups coarse Kosher salt
5 bay leaves
1/4 tsp ground cloves
2 tsp whole peppercorns
1 tsp allspice berries
1 tsp mustard seeds
1 cup white vinegar
1/2 cup white sugar

7 cloves garlic, crushed
1 (12 lb.) brisket

Bring brine ingredients to a boil. Cool. Add the garlic cloves to the brine.
Submerge the brisket into the brine as shown in above recipe.
Refrigerate for 1-1/2 weeks. Remove meat from brine, stir, and then return it to the brine, with heavy platter on top.
Refrigerate for another 1-1/2 weeks.
Rinse with cold water.

Cook.

ok, people, so I've been ordering snacks/cookies/muffins from the gemach. yum. I don't know if I gained any weight, but I don't seem to have gone down a size in the last month Smile

I think having a batch of mayo available has been very helpful. I made babaganoush and have been eating quite a bit of it. yummy.

keep the fattening recipes coming, please. thanks.

Great to hear that you're feeling better mummydearest! Did you ever try the dill dip? Here goes:
2 cups SCD mayonaise
1 pkg prechecked dill
less than 1/4 cup vinigar
3 cloves garlic
1 tbspn honey
blend all ingridients well. Goes great with salmon or any salad.
enjoy and bon appetite!

I don't know, but I don't think I want to bother baking their stuff anyway. it's easier to just order from them. I've been eating significantly more since I got that shipment of cookies and muffins. yummy. unfortunately I eat them too quickly. so I suspect I'll have to get an extra freezer and order an insane amount at once.

Ra mom the gemach does give out recipes. I have gotten recipes from both of them. Which one had carrot muffins? I' d love to try them.
BTW I did get an extra freezer just for this purpose. When I order or bake , it's tons at a time, so I really needed the extra space.

I guess I'll call them and ask for the recipe.

mummiedearest, so glad to hear you're enjoying the baked goods from the Gemach. It's totally worth it to get stuff from there. There's so much to cook as it is, who has the extra patience to bake too! My friend also got a separate freezer just for this purpose.

Duh! When one of you order from skver, please tell me. I have no way of getting it here. All I need from there is as many vegetable blintzes as you can convince them to part with. That's all I eat really . Nuts don't work yet. Cheese, only a cube a day (ok, progress).

Carrot Muffins
8 eggs

2 cups oil
4 tsp cinnamon
4 tsp vanilla extract

Blend eggs and honey in white bowl from Bosch mixer.

Yay! I can hardly wait to make them myself for Pesach.

I'm going to halve the recipe iyH right before Pesach. You're welcome to come over for a taste test. Smile They really are delicious. I hope mine will come out as good as hers. (I will will prob be grinding my own almonds.)
