Osso Bucco? Google for recipes. Real McCoy is supposed to be made with veal shank with marrow bones, but it's basically veal stew with chopped veggie and tomato sauce. Veal tends to shrink so I'd trim visible fat, season with salt & pepper dust the meat with flour and brown in the skillet first. Sautee chopped onions, carrots and celery in the same skillet. Transfer both meat and veggies to the crockpot. Add 1cup dry white wine , 1 tin chopped tomato, a few thread of saffran. Yummy with parve risotto, rice, pasta or potato. Freezes well. (I made this one in oven proof casserole, with about 2lb veal.)
