1 hour | 15 min prep - From recipezaar.com
SERVES 2
* 2 cloves garlic, minced (I use 3 or 4)
* 6 tablespoons light olive oil
* 1 teaspoon dried basil
* 1 teaspoon salt (I use sea salt)
* 1 teaspoon ground black pepper
* 1 tablespoon lemon juice
* 1 tablespoon fresh parsley, chopped (I used stuff from the spice cabinet)
* 2 (6 ounce) salmon fillets
1. In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley.
2. Place salmon fillets in a medium glass baking dish, and cover with the marinade.
3. Marinate in the refrigerator about 1 hour, turning occasionally.
4. Preheat oven to 375 degrees F (190 degrees C).
5. Place fillets in aluminum foil, cover with marinade, and seal. (I just baked in the dish that it had marinaded in - covered in foil)
6. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

this was fantastic! This is the first easy, tasty, not saucy recipe I have ever made and enjoyed. I would definitely make it again. Reminded me of a pesto sauce.
Only thing... we found it to be too salty. I would half the salt next time.

Can anyone help me? If I understand correctly, you wrap the fish tightly in foil after its marinated for an hour and bake it while its wrapped tight? did I get it right?

Glad you guys liked the recipe! I got it from www.recipezaar.com which is my favorite place for recipes.
I didn't wrap it so tightly in foil. I've made it without putting it into foil at all.

I just did what defy mentioned... I marinated it in a glass dish and just covered that dish with foil to bake...

the instructions say to marinate first ... then wrap tightly to bake ...
I think you got it
this recipe sounds good - I think I'll make it for a change (so it better be good)

Thanks for posting this recipe! Just made it today and it is delicious. I used a third of the amount of oil though, and it still came out great.
