oh, it's very easy! I take 6 eggs plus 6 Tbsp. of water and beat well with a fork. Add a big handful of frozen peas (and carrots, if you want) and mix some more. Spray a muffin tin real well, divide egg mixture into the tin, and bake at 350 until egg is set in the middle - about 10-12 minutes. immediately after taking out from oven, run a knife around them to loosen. after they are cool, you can takew tjem out and freeze them.

oh and also, when you are putting them in the tin, I usually put spoonfuls with more veggies in eah compartment first and then fill the rest up with the egg mixture.
