This meatloaf is really good, easy to make and has plenty of vegetables in it. I was shocked that my whole family loved it. That's saying a lot.
1 1/2 lbs chop meat
2 boxes(10 oz.) chopped spinach, thawed and water squeezed out of it.
2 T oil
1 large sweet onion, finely chopped
2 stalks of celery, finely chopped
1 cup sliced mushrooms
3 eggs
1/2 cup bread crumbs or matzo meal
1/2 cup ketchup
Preheat oven to 375 degrees. Line a large pan with foil.
Put meat and spinach in a large mixing bowl, set aside. In a frying pan heat oil, add chopped onions and chopped celery. Cook over medium high heat until vegetables start to get tender. Add mushrooms and cook another 5 minutes or until mushrooms are tender. Add the vegetables to the bowl with meat in it.
Add eggs, bread crumbs, salt and pepper to taste. ( I also add garlic to it.)
Be brave, with clean hands mush the whole mixture together. When it is well combined put on baking pan
and form into a loaf. Spread ketchup over top of meatloaf. Bake at 375 for about 1 hour. Remove from pan to serving dish so it doesn't sit and absorb the fat.
Delicious hot or cold. This freezes and reheats well.
