definitely lemon poppy seed muffins.
Muffin
2 cup/s Flour
1 tablespoon/s Poppy Seed
1/4 teaspoon/s Salt
1/2 teaspoon/s Baking Soda
1/2 cup/s Butter
1 cup/s Sugar
2 Large Eggs
1 Zest Of Lemon
1 cup/s Sour Cream
1 teaspoon/s Vanilla Extract
Glaze
3 tablespoon/s Fresh Lemon Juice
2 1/2 cup/s Confectioners Sugar
Preparation
Muffin: Preheat oven to 200C. Line a muffin with paper liners. Whisk together the flour, poppy seeds, salt and baking soda. In a separate bowl cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating after each addition. Mix in the lemon zest, sour cream and vanilla extract until well blended. Stir in the flour mixture until just combined (don't over mix). Spoon the batter into the muffin tins and bake for 15-18 minutes. Remove from the oven and cool slightly. Put on the glaze while the muffins are still warm.
Glaze: Mix the confectioners sugar and lemon juice together until nice and thick (you might need some more confectioners sugar). Drizzle over the muffins.
