dh doesn't eat zucchini, cauliflower, broccoli, (att: SaraG- also spinach ) and I need ideas for side dishes.
I've been making a lot of the following: mashed potatoes, home baked fries, rice, green beans, (frozen) mixed veggies, corn on the cob...... I try to refrain from making pasta too often as it is very high in calories and carbs.
any ideas of something else and different??????

we have alot of israeli salad, when I have more time I make tabbouleh which is similar but a bit more substantial, I use bulgur instead of the pasta type of couscous
roasted carrots are good too (olive oil, baby carrots, sea salt, roast about 40 min), or if he prefers sweet then you can simmer carrots in OJ and honey
dh likes roasted cherry tomatoes too (same way as carrots above, but I add minced garlic)
will he eat sweet potato or butternut squash? so many possiblities there

How about grilled tomatoes, onions, eggplant, peppers.

A bit of orzo with veg. (the one he likes) (I know its pasta but with veg. you'll definitely serve less.)
Asparagus
A good lettuce salad

funny that my thread got brought up again as I'm finding that all recipes that look interesting have the "forbidden" foods in them...
I've got to widen my husband's range as it's quite limiting currently!!!!

green beans I make MUCH TOO OFTEN as I don't have many other veggies to choose from. Apple Crisp I'll have to try. (apple kugel though I've made plenty of....)

Does he eat muzhrooms?
I sometimes saute a lot of sliced mushrooms, carrots, onion, garlic and mix it with prepared buckwheat. My husband is not into buckwheat, but he likes this "pilaf".

My husband doesn't eat..... (let me see how many of them I can remember!)
broccoli
asparagus
cauliflower
avacado
mushrooms
eggplant
zuchini
hot dogs
spinach
sweet potato (only sometimes will he eat)
any squash
pumpkin
any fish (except g'filta fish on Shabbos)
Gosh..... I wonder what he DOES eat!!!!
he eats:
lettuce
carrots
celery
cucumbers
tomatoes (but not heavy into them)
corn
green beans
potatoes
can't think of any other veggies that he really eats.
Now do you see why I feel like my hands are tied at times with variety
PRIZE TO THE PERSON WHO CAN COMES UP WITH THE MOST VARIETY OF SIDE DISHES (please not too many pasta dishes or anything fried.)

I was making that a lot... but stopped once my mother told me how to make microwave rice which is soooo super fast.... and not sure it would work for brown rice which takes so much longer in general to cook.
WHITE RICE IN MICROWAVE:
2 cups of raw rice
4 2/3 cup water
salt
cover well.
20 minutes on high.
let it sit a few minutes when done, and then fluff with fork.
EASY, EASY, EASY.
anyone know if this could be done in the mic with brown?

of course white rice is faster, but brown rice is much healthier!

Queen,
I have a steamer with a ricemaker insert, it doesn't matter now to me if I make white or brown rice, its equally easy. I just put in rice and water, set the timer... at the end it beeps and turns off by itself!

When I need a quick side dish, but don't have a lot of time (especially w/ last minute guests!) I make a platter with cut-up veggies: cucumbers, celery, tomatoes, green peppers. I make a dip to go with it or just some salad dressing in the middle of the platter! Everyone loves it! Normally, you see this on a buffet, so it's a nice treat at a sit-down meal.
