I'm also vegetarian - are you asking about Shabbos morning or the Shabbos seudah?

Milchig quiche, dips, multiple salads with nuts and herbs and other yummy filling things or something like taco salad, sometimes a nice cheese platter, good quality fish served room temperature, sometimes finger foods/appetizers that don't have meat, fruit salad, deviled eggs, minestrone soup, spicy peanut butter noodles....and best of all, decadent dairy dessert.
No one ever wants for food!
