I took a buttnernut squash and cut it in half. I scooped out the seeds and put the halves face/flesh up in a baking pan with 1 in of water at the bottom. I baked uncovered at 350* till soft (like you would want for a baked potato). I'm not sure how long this took since I lost track of time. Maybe an hour. To serve I drizzled balsamic vinegar over the halves. YUM!

Did you cut it up in slices? Who would eat an entire half of a butternut squash??

MMMmm. I did the same, but sprinkled with cinnamon and sugar.
