We make meat lasagna all the time! I make the meat sauce in huge quantities and freeze it, then it's a snap to make the pasta, put it together, and throw it in the oven. No actual recipe, but here is what we do:
Dice and sauté onion, garlic, zucchini, peppers and mushrooms. Add fresh or frozen basil, oregano, salt, pepper, garlic powder. Add canned diced tomatoes (for my big batches I do around 4 cans) and 3 jars tomato sauce. Let it all bubble up for a few hours. Your house will smell yummy. When sauce is a bit reduced, boil up lasagna noodles, layer, and bake. Yum! For me and my husband, we make zucchini boats (slice in half, scoop out the seeds) and scoop the sauce in the boats and bake. Yumm!

can I make this without the eggplant? just with sautéed vegetables?

Susie fishbein has a great recipe in one of her entertaining cookbooks. Complete with a white sauce to substitute for cheese. Maybe try googling it?
