If I prep my shnitzel tonight and want to cook it tomorrow, I assume that it should go into the refrigerator, not the freezer. What’s the best way to wrap and store it in the fridge?

Pieces of parchment paper between each piece - stacked in a Ziploc bag.

It would because the breading on pesach gets soggy quickly.
