Lunch will be pesach crackers with a platter with choices of sliced kielbasa, tuna, sliced eggs and guacamole.
Early dinner will be roasted potatoes and baked breaded chicken cutlets (more of this will be served seder for those who are still interested).

Lunch is lamb chops. We want the 14th of Nissan to smell like roasted lamb, because that's when the korban Pesach was given. (Check your minhag, some don't eat roasted meat on the afternoon of erev Pesach.)
We also have cucumbers and leeks, and watermelon for dessert, to remember what the Jews ate in Egypt.
We like to get into the spirit of things.
I also make a big pot of loaded chicken soup and leave it on the stove for anyone who's hungry to take.

I'm going to try the potatoes and eggs! How long do you cook eggs for?
