I make different ones depending on our moods. Either with potatoes and root veggies and a duck sauce/ketchup mixture, and another more like chicken cacciatore with onion, carrot, celery, and tomato with an Italian style tomato sauce over pasta.

I rotate a bunch of recipes, but my teenager will only eat a few. She will eat most combos of starch, tomato based sauce & cheese (pizza, lasagna, etc) and occasionally wings or lamb chops. On Shabbos she will consider other forms of chicken or turkey breast.
I don’t cater to her, if she doesn’t like supper, she can make herself something.
In addition to the things she’ll eat, here are other suppers I will make (I usually try to have a protein a carb & a veggie but sometimes we only have 2 of the 3)
Mains:
Steak
Salmon
Chicken or beef stir fry (from leftovers)
Chicken or beef pot pie (also from leftovers)
Minestrone soup (with meat)
Stew
Hamburgers
Meatballs
Franks (either grilled in buns or cooked with beans)
Blintz soufflé
Refried beans
Meat sauce
Chili (pareve or with meat)
Sides:
Pasta
Rice
Baked potatoes or sweet potatoes
Broccoli or other frozen veggie
Gnocchi with veggies (roasted)
Garlic bread
Salad
Canned corn

Fleishig. Chili recipe - ground meat with spices and tomato sauces/pastes, and I bake the fries in the oven, and then spoon the chili over the fries.
(I make it w/o beans due to some picky eaters whose names/identities I will not mention)
ETA I also have a recipe I developed myself for mushroom/cheese fries

Suppers are usually a protein, carb, and veggie. I mix and match.
Proteins:
Grilled chicken cutlets - mustard sauce, chili lime, rosemary, shawarma spice, etc.
Schnitzel - regular or sesame or honey-mustard
Chicken stir-fry (includes veggies)
Meatballs - in tomato sauce or in chili/cranberry sauce
Tacos
Chili
Salmon - roasted with spices or in a mayo or mustard based sauce
Burgers
Carbs:
Rice
Roasted potatoes
Mashed potatoes
Roasted sweet potatoes
Pasta
Veggies:
Various soups
Roasted broccoli
Roasted zucchini
Roasted green beans
Caesar salad
Isreali salad
Crudites
Some meals just go together, like meatballs, spaghetti, and either soup or salad.
Salmon always has to come along with mashed potatoes.
On days where I don't want to/have time to cook, I serve fish sticks with tater tots and Dr. Prager's veggie shapes. Or chicken nuggets with fries and veggie shapes. Sometimes pasta with cheese and sauce or ketchup.

Here's the cheese fries recipe:
I used regular straight-cut fries, but any will work. Spread on a cookie sheet. Drizzle with a little oil and salt and baked at 350 for about 30 minutes or according to package directions.
Mushroom sauce:
Saute small carton of mushrooms till they shrink a little….. Add cube of garlic and about 1 tbsp cornstarch. Mix, then slowly add 1 ½ cups water and salt (to taste). Bring to a boil, simmer for a while till it slightly thickens. Add in a bit of milk - about 2 tbsp or so.
Sprinkle shredded cheese (about 1 cup) over the fries. Pour mushroom sauce over it. Bake another 15 minutes or so till all melted.

Make fries same way....
For the chili:
Saute: 1 onion
1 clove garlic
1 lb ground beef
can of diced tomatoes (I think it's a 14 oz can)
2 tbsp tomato paste
1/2 Tbsp chili powder (or more, if you want more spicy)
14 t cumin
1 tsp salt
1/4 to 1/2 tsp cayenne pepper
You can cook for as much time as you have, but try for at least 1/2 hour to 45 minutes. Spoon over the fries.
I like to serve with Chummus and/or techina, and guacamole or a tomato salad on the side.
