Hemoglobin little low
Hematocrit little low

Probably not the best idea, but you can google everything.
Best is to go back to your pediatrician and ask him/her what is important to treat or at least monitor.

Is he a little sick, under the weather? Or just finishing off an infection of some sort?

WBC elevated -like another poster said, is he feeling under the weather? It's elevated when someone is sick.
Hemoglobin and hematocrit low- he may need iron supplements. Is he eating a lot of solids? Youll need to increase his iron intake.
Elevated platelets can also occur during illness or due to iron deficiency.

His platelets are very high. But his white count isn't terrible at all. It sounds like an infection to me. My dd had over 30 with strep and my Dr wasn't concerned at all. Platelets can go high or low during an infection or even virus. That's what my pediatrician told me.

Eosinophils are allergies, my baby is allergic to soy and dairy and he had high levels once. Wbc being high is likely due to infection. I would try not to worry as those aren’t immediately concerning especially if he seems overall healthy. Bring it up with doctor though and consider if he may have a food allergy.
