Flour smells

I purchased a new bag of challah flour that expires in 11/2023. As soon as I opened the bag I thought something smelled a bit off but went ahead with making my challah dough. I keep smelling something off (still in the dough stage) and am nervous that I am using bad flour. What would happen if I just go ahead and ignore it and bake and eat the challah? Wwyd?

I've had sort of moldy smelling flour. I used it and no one got sick, but I don't love the idea, bc I don't know why it smelled

Mold in flour is dangerous because it has toxins. Even if probably nothing will happen, it's not advised to use it.

Only flour should not smell, but if it has also Yeast or any other ingredients added, then it will have smell which is maybe fermentation mold to make it rise
