Hi,
Does anyone have a good recipe for zucchini soup with peeled zucchini? Can I just use any recipe and peel the zucchini? thanks!

The first BY cookbook has a cream of asparagus soup that I substitute the asparagus for peeled zucchini. Yum!

Sautee an onion
Add spices you like, you can't go wrong
Put in your zucchini. You can add other veggies but you don't have too.
Add water
Cook
Blend

I always add a potato it makes it creamy when you blend.. otherwise I find the soup comes out watery

It comes out gorgeous when pureed with the peels, but you can definitely use peeled zucchini with any recipe.
