When I was growing up, the PTA was the Parent Teacher Association. They did things like arrange classroom gifts for the teacher, collaborate to run school functions, things like that. Apparently in the yeshivish world, “PTA” is Parent-Teacher Conferences. Why is it called that?

Same reason some still call the numbered trains in the NYC subway system the "IRT"-- because that's what they were called originally.

What do you mean the old name stuck? Old name for what?
PTA as in Parent Teacher Association is not an old name, it is a name for something completely different. And it's not old. It's still used by schools all the time other than some yeshivsh schools.
I have never heard an explanation for it that makes any sense. Do schools have actual assemblies for parent teacher conferences? Isn't it individual meetings with parents amd teachers to discuss the student's progress?

Probably assembly. There is also a PTA made up of parents which is the parent teacher association. The name is just used for both. And it’s not just in the yeshivish world I’ve seen it in many types of schools.
Was it the PTC in your school? What else is it called?

When I was a girl the PTA would arrange class gifts and also conferences.
The class mother was the PTA representative at the meetings, was the one to collect gift money, coordinate trip chaperones and also scheduled appointments for the twice a year conferences.
It was called PTA Conferences.
I think that name stuck.
