what can I give her/ kids?
I am going on vacation and she is taking my little one.
FYI she never goes on vacation or eats out as she has 7 young kids.

Wow, that is really nice of her. She is taking your kid for a week? And she has seven b"ah? You really need to thank her...
Get her a pampering package? : gift certificate to a mani/pedi, plus a giftcard at a local pizza/chinese place to feed her family takeout supper one night, plus nice chocolates amd her favorite treats, and a book/cookbook she'd enjoy and a bubblebath or lotions or something nice like that
