Carrot dip
a la Spark ppl, with my changes
1 large onion, cut up
2 cloves garlic, chopped
4 tablespoons olive oil, divided
2 teaspoon curry powder
1 teaspoon ground cumin
6 large carrots, sliced and very well cooked
one jar white kidney beans, drained
1/2 tsp salt
Directions:
Sautee your onion, garlic, and the 2 T of oil and cook until brown. Add your spices.
In food processor, chopper, or blender, puree onion mixture with carrots and kidney beans. With motor running, gradually add remaining 2 tablespoon olive oil through the feed tube.
Serve room temp. Makes about 8 servings
