Thanks ra_mom for the soup recipe.
I put up a big pot of it today, and had some.
It's very delicous. I wish there was a way to make it thicker though.

grind the soup with an immersible hand blender to make it thicker.

Thanks Cm. That's what I normally do with a diet soup.
But this has mushrooms & I'm afraid it will have a funny texture if I blend it. Maybe next time I'll cook up the squash first & blend it & then add it in. I anyway don't like a completely smooth soup.

The fat free soup is very watery. I got used to it though.
If you'd like, you can take off some of the liquid (you can prob freeze it and use as a vegetable broth), and then blend the soup with a hand blender. (If you blend it will all of the liquid, it will still be too watery.
If you want a really creamy zucchini soup recipe, I have one. It has only 1 Tbsp of oil in the entire pot. And I am certain you can even leave out the oil and make it completely fat free.

Of done a cream of zuchine (brocolli too) without oil that is thick. I'm sick of it tho cuz I used to make it alot.
