Baleebusta's choice cookbook has a recipe to make mints. I also recall a recipe for brownie with mint frosting.

There is a recipe on here for a brownie with mint frosting.
I know someone who makes peppermint brownie cupcakes. She places a mint choclate coated cookie (I think it's from pashkez) on the bottom of the muffin tin & then pours a regular brownie batter over it. They are very good.

thanks for all your responses. I already am making mint brownies and mint meringues. just wondering if there were any different ideas. I like the idea of mint cupcakes although I dont know if I would use that for shalach manos. maybe for shabbos. any ideas what else I could to send with it?
