I am making more fish, beans and to my dh who insists he has a soy intolerance "soy"!!! He is a big meat fan and doesn't eat any dairy because of his congestion. He asked me if he should eat dairy just this week. I said if he does that then he has to eat soy/tofu as well. He agreed:))

I made terriyake salmon, breaded and fried sole, spinach and mushroom quiche and a great penne recipe with cherry tomatoes, black olives and arugala- YUM

Dinner just went into the oven.

Homemade pizza.

Hubby has tuna and extra cheese on his.

D1 has tuna, corn, onions, green olives and extra cheese on hers.

D2 has tuna, corn and green olives on hers.

And mine has corn, onions and green olives.

Hmm I got a bunch. The easiest is to saute onions and any vegetable you like till its the consistency you like and add cubed firm tofu. You can add soy sauce, pepper and salt or any other marinade or sauce.

You can eat it over rice or in a wrap.
You can add it to soup.
It also really good baked and then eaten as you would eat your favorite chicken recipe.
I sometimes puree it with fruit for a smoothie.
You can mix it with ground beef or turkey in meat balls or hamburgers. Or just use it as is
Its great straight in salads with a nice dressing.
Make pasta and add the tofu to your favorite sauce or straight on the pasta with lots of good cheese.
I could go on and on once you get me started:))

We had homemade pizza too. Toppings: mushrooms or mushroom/red pepper/onion. Half of one pizza, which ended up being eaten almost entirely by me (no surprise there), had yesterday's not so great tomato sauce made with cherry and vine-ripened tomatoes plus zucchini and red pepper, plus extra cheese. It was really good...

So I buy a prebaked pie shell- the frozen kind. I defrost a box of spinach and squeeze out the excess water. I add one fried onion, a can of mushrooms, envelope of onion soup mix, 2 eggs, tbsp of mayo, a splash of milk and a bag os shredded cheese- any kind. Mix all together, fill shell and bake for about 40 min- 1 hour.
Its my husbands favorite dairy dish.
