A Mexican Dinner Dish!
2 T oil, any
1 lb chopped meat
1 chopped green pepper
1 cut up onion
4 C canned tomatoes (or equiv fresh with some liquid)
1 lb canned kidney beans, undrained
1 cup diced carrots
1 very small can mushrooms, drained (or use a few fresh instead)
1 cup raw rice, any
1/ tsp chili powder
1/4 cup sugar
black pepper to taste
In your oil sautee the chopped meat, greenpepper, and onion for approx. 5 minutes.
Add remaining ingredients and stir. Cover and cook for about half a hour.
Eat and enjoy!

Me gusta mucho!! Its even better if you put it in a tortilla, roll it ,then fry it till the tortilla gets crispy - eat it with guacamole and salsa!! (Anyone notice Mexican is my FAVE type of food?)
