Would this work to recycle it ? What kind of soup?

Saute onion and mushrooms, add the zucchini and then add water and a bit of barley. You can add chicken soup mix if you use it, and blend with an immersion blender if you like your soup smooth.
Other possibilities: sweet potatoes and parsnip, canned white beans, roasted red pepper, cauliflower and lentils.
Just about any kind of roasted vegetable works as a soup base.
