I am looking for compot recipe that doesn't use any berries or pineapple?

I make apple sauce in my pressure cooker. It's just peeled cut up apples with a small amount of water for 10 minutes under pressure.
You may add cinnamon and ground cloves if you like.
Many people add sugar. I don't.

I also cook peaches or plums when they're in season.

I just cook plain apples with a little water with 2 fruit flavored tea bags in the flavor I’m looking for (like cherry or pomegranate)

Any fruit cook with water & sugar. Like pears. I use Bosc pears cut into quarters, vertically. Fill pot with water. Add sugar. Cook till soft.

Cherry. Canned or jarred sweet or sour pitted cherries. Same amount of water. Add sugar & vanilla sugar. Boil up. Cool. Done.

Delicious and super easy!
cut up pears, or pears and plums into chunks. I like approx. 1 inch.
Or just quarter them.
put pieces into a 9 by 13 pan. COver.
Bake at 350 until all soft.
Do not add any water or sugar. The fruit produces its own delicious syrup!

You can do strawberry/rhubarb. Plums. Peaches.

I usually do a mixture of apples, peaches, and plums, and 1-2 cups of sugar.
