What to do with garlic?

Can anyone suggest what I should do with a lot of fresh garlic that needs to be used ASAP? I'm adding some fresh cloves to my chicken soup and I can make some marg/oil and grarlic mix to freeze way for garlic bread... What else? They're not the freshest. Could I mince them and store in the fridge to use in cooking? If yes, do I need to mix them with something - oil, salt etc? Or does anyone have some sort of (mayo-free) dip to make with them?

20 clove garlic chicken is delicious. Peel them and keep them whole.

You can peel the cloves and bake them in a small pan with a little oil to make delicious garlic dip for shabbos.

Make garlic confit. The cloves are soft like butter and you can use the infused oil for any recipe your making. https://www.bonappetit.com/rec.....fit-2

I use olive oil though

Slow Cooker 20 Clove Garlic Chicken
4-6 chicken legs, with skin
2 onions, sliced
1 Tbsp olive oil
2 tsp kosher salt
2 tsp paprika
1/4 tsp black pepper
20 garlic cloves, peeled, but intact

Place onion slices on the bottom of the stoneware insert.
In a large mixing bowl, toss chicken parts with olive oil, salt, paprika, pepper, and all of the garlic cloves. Pour into crockpot, on top of the onion.
Do not add water.
Cover and cook on low for 6 - 8 hours, or on high for 3.5 - 4 hours.

Or you can also do it in the oven for 2.5 hours at 350.

Very true - says me who just had to discard like 15 onions that I prepped for soup by quartering, then put in fridge overnight without oil/salt Can't Believe It Laugh

I make this in my crockpot sometimes for the night meal on shabbat. It always comes out amazing

Mix with pitted olives, jalapeƱos pepper and I've oil. Bake 1.5 hours. Yum

Garlic mayo! Roast a few cloves in the oven, then combine with mayo, splash of lemon juice, pinch of salt. Delish!

Olive tapenade and homemade chummus both use a few cloves each.

YUM! This was last night's supper Smile Delicious! I added a couple of sweet potatoes and used 4 drumsticks instead of chicken bottoms - only problem was that it finished too quickly Wink Best part was not having to cook when I got home from work...
Made the garlic confit for Shabbos and was super easy and tasty - thx to everyone for the ideas!

Garlic chicken:

Whole head garlic, peeled
Olive oil
Salt
Cayenne pepper
Paprika

Puree together to make a paste. Marinate chicken cutlets for a few hours and then grill.
