I somehow ended up with 20 cucumbers. Any ideas on what I can use them for? I was told no cucumber salad tho my husband might like that if someone has a good recipe.

If your DH doesn't want cucumber salad, what does he expect you to make with them? That's kind of what they are for.
Lemon juice and fresh snipped dill makes a nice salad.
If you have KLP cider or vinegar, you can make pickled cucumber salad that will last for the whole week.
I suppose you could peel them, seed them, and make a puree for a cold soup or refreshing drink.

If you don't need them why not give them out to neighbors who might need? Assuming everyone is healthy in your house and you give them away without any direct contact. The stores are insane and people might really need them.

Cucumber salad
8-9 cucmbers peeled & sliced
Put into bowl with some salt and let soak about 1/2 hour to 45 min.
Pour our the water
And the add
1/4 vinegar
1/2 cup water
1/2 sweet onion

I once heard you can put them in soup instead of zucchini but don't quote me on that

Yes, you can make them in a soup. I once did it but lost the recipe. What I would do is fry some onions, add in cucumber slices peeled, a potato and water and cook, then blend. Bit of interesting flavor but is good and will keep that way. Similar to zucchini soup

Salad 2 ways
1)Sweet with sliced onions(olive oil,a pinch of salt, sugar and lemom juice)
2)olive oil, vinegar, frozen garlic cubes and frozen dill. Salt and pepper. Super delicious!

So believe it or not we ran out of cukes. And I put an order in and they didn’t have any.
Have lots of zucchini. Anyone have experience substituting zucchini for cukes in Russian coleslaw?
(As an aside the 8 avocado we ordered became 8 bags of avocado. So I may have solved the cuke issue but still working on the avocado one)

For the coleslaw, I would shred the zucchini, not chunk or slice like you would cucumbers.
Avocado:
Guacomole
Ice cream
Dressing
Add to salad
Substitute for mayonaise

Is there a reason you think shredding would be better? I have a couple of salads that I would have liked to make that call for cukes but I think shredded zucchini wouldn't work in them.

Because I personally don’t like big pieces of uncooked zucchini.
