Careful how you chop it, my son’s eyes blew up to golf ball size.

Chop them thinly and sauté well with eggplant cubes and whole tomatoes (from the can) and equal amount of onions. Add sugar, salt, pepper, then send me some.

Freezes exceptionally well, so make a bunch of little containers for every Shabbos.

I make a great jalapeno dip.
I make 2-3 batches on shabbos to last all week. Usually its gone by sunday.

I fry up diced onions (one large)
3 cloves of garlic (crushed)
1 large green pepper
and 2 diced jalepeno (seeds removed if you want it less sharp)
I fry in olive oil ( a nice amount) for about 20 min.
then I add a big can of diced tomatos ( I think 32 oz.) or two smaller cans.
and let the whole thing simmer for about 20 more minutes.
Season with salt and pepper.
Its really good!
