I reordered my previous list a couple of times when shopping online and didn't edit the tomatoes and red peppers and I still have from two weeks ago!

What can I make with them?

I was thinking homemade tomatoe sauce and shakshuka. What else?

I would say it’s , the Hungarian version of ratatouille.
There are various versions. Some people add sausage or eggs to the mix.

I would just roast them. Can add zucchini, broccoli, red onion, eggplant or mushrooms.

Roast and puree. You will have the base of an amazing sauce (or dip) for so many purposes. Season according to your taste. Would even freeze well if there is a lot.

I was thinking fajitas. I've never made them so we'll see. I only have red peppers though. It'll still be good I assume?

Roast the peppers
Peel the chard skin
Slice into strips
Mix with finely minced garlic, olive oil and salt

You can add the peppers to baked chicken bottoms.

You can do veggie rice.

You can add the peppers to chicken lomein with veggies

You can add the peppers to sloppy joe with veggies.

I had today in a cafe, stuffed portabella caps filled with peppers tomatoes & melted cheese
