I'm going to have a guest who cannot eat any raw fruits or vegetables, she is highly allergic. Any ideas for what to do for her for charoset?

Try dried dates, prunes, raisins, and/or figs. Plump in a little boiling water, grind up, mix with ground nuts, add a little red wine and cinnamon, ginger, cloves or spices of your choice. Or just use applesauce in lieu of fresh grated apples and follow your recipe, adding more ground nuts to achieve the texture you want.

I was also going to say applesauce. Super easy.
Charoses is one of the few Jewish customs where we have to have it --unlike latkes on Chanukah--but we have very loose guidelines to follow. Embrace it.
