I make cucumber salad with sliced Persian cucumbers, season with white vinegar, a tiny splash of olive oil, lots of salt and pepper. If I have fresh dill I add a bunch. Prepare 15-20 minutes before the meal for best flavor and texture. It's sour and yummy!

The typical cucumber salad with white vinegar will have sugar in it unless you want to sub a sweetener instead. If you're open to trying it, I've made a Korean flavored cucumber salad before. I don't remember which exact recipe it was but you can Google and play around with it. Here's one example

I made the cucumber salad from the Rory cookbook for rosh hashanna & it had very little flavour to it.
Like barely a taste.

For cole slaw, I use about 1 cup of Rories creamy caesar dressing and 1/4 cup lemon juice.
Last week I used homemade mayo, lemon juice, garlic powder, salt and pepper.

I never put sugar in any of these.

Cucumber salad: thinly sliced cucumber, red onion, red pepper, occasionally dill, vinegar or lemon juice, salt, pepper.

Corn salad: dressed with mayo (does that count as having sugar?) and salt

Coleslaw: Dressed with mayo, vinegar (sometimes apple cider or balsamic), salt, pepper, garlic powder. Sometimes I'll just mix Italian dressing with mayo and that tastes just like the deli version, but that does have a bit of sugar.

Cole slaw- mayo, salt, pepper. A little white vinegar, if you want. I do either purple cabbage or white cabbage with a little grated carrot.

Corn salad- mayo, salt, and pepper. Canned corn, Israeli pickles, cucumbers, optional peppers.

You might need to add more salt.
