Will they taste much better if I make them day of Purim vs if I make them today and freeze?

incomparable. However you can get away with baking them today if you must.

Following. Not sure what I got myself in to when I offered to make them for the Purim seuda for the extended family.

Thinking of waking up early Purim morning to get it done.

To be completely honest, everything tastes better baked fresh. You just have to be realistic about what needs to be done day of versus what will work reheated

For example, I once by accident froze lettuce because my mommy brain put it in the freezer instead of the fridge. Spoiler alert: frozen lettuce is not edible. LOL

I always bake and then freeze. Let defrost on the counter and rewarm before the party for about 20 minutes. I’ve never had an issue with the taste or quality.

even if some say they will taste better fresh- this is a totally freezable item and you can totally make them now and freeze them and they will be delicious!

Everything is better fresh. But either way I'm sure they will be good and enjoyed.

Thanks! I guess I have to decide. The only other thing I need to make day of is a salad.

But Purim is so hectic so maybe it's best off to do in advance.
