With summer fast approaching, I made up a recipe of a soup and it tastes absolutely delicious. Its good warm, but even more delicious chilled. Perfect for a hot summer day.
Ingredients:
2 small or 1 medium onion, diced.
2 cloves of garlic.
2 medium potatoes, peeled and cubed.
4 Large zucchinis, cut in half lengthwise and sliced.
1 large carrot, peeled and chopped into a few large peices.
3 sprigs of fresh mint.
Lemon juice
Salt to taste
Instructions:
Saute onions and garlic until golden. Add potatoes and saute for a few minutes. Add carrot and continue to saute for two minutes longer. Add zucchini and saute for another few minutes.
Add water to cover. Bring to a boil and simmer until potatoes and zucchini are soft.
Remove carrot.
Blend.
Remove mint from stems, chop up really finely and add to soup.
Add a drop of lemon juice, a tablespoon at a time, to taste.
Add salt, to taste.
Either enjoy hot, or chill for an even more refreshing appetizer.

Because some recipes I looked at for something similar said to cook the stuff in vegetable stock. I said why bother- add the carrot to give flavor to the broth, then take out the carrot. I guess you can leave it in, I didnt and it tastes delish. I cant vouch for how it would taste if you left the carrot in and blended it.
