well, if it has a significant amount of breadcrumbs - I think R'Bodner says to make mezonos in that case....I think it's machlokes though?

I would say shehakol. The ikar of the meal is protein, not breadcrumbs. I heard this psak also from a sfardi rav (Rav Avraham Yosef) on the radio.

I thought the issue was that when it comes to mezonos even when it's not the ikar, we make a bracha on it (think cheese cake with a thin layer of mezonos on the bottom). I could be wrong though.

Both 
We make a mezonos on s/th else, and then a shehakol on s/th else, then dig into the shnitzel

It's a machlokes. If I remember correctly according the Alter Rebbe we make a mezonos.
