I bought a bottle of Pom for a rosh hashana muffin recipe but I have plenty left over. Any good recipe ideas or ways to use it up? I was thinking maybe for a French roast or chicken marinade?

The recipe is from Miriam Pascal’s cookbook, Something Sweet. I remember reading somewhere that she doesn’t like those recipes to be posted...I could be mistaken though. If anyone knows whether that’s accurate or not I am happy to share it!

Tweety1, I just looked them up. They're called pomegranate cupcakes, and they're on the joyofkosher.com website. They use both pomegranate juice and pomegranate seeds, so they're suitable for simana d'milta, except that it's not so great for me to be serving cupcakes during the meal. But I will try making them anyway.

I used Pom brand, found in Publix (not Jewish store). Just beware they have different flavors, make sure to get 100% pomegranate juice and not one that’s mixed with blueberry or whatever.

I just made my brisket with pomegranate juice. Also added dried apricots and prunes. Hope it comes out delicious.

There's a recipe in the Mishpacha that just came out for pomegranate red wine chicken. I'm going to try it out. I bought the Pom brand in ShopRite.

I don’t really have a recipe for the brisket. . Slice onion. Sprinkle apricots and prunes. Lay brisket on top. Add spices: salt pepper garlic and onion powder. Pour a cup of Pom juice on top. Seal tightly with foil. Bake 325 for 2 hours. Hope it comes out great for you!
