Babaganoush al ha-eish
as inspired by TzenaUrena
eggplant
mayonnaise
salt, pepper, garlic powder/fresh garlic
You slice open the eggplant(s) and put them on a cookie sheet. Broil them for about 20-30 minutes, then grind in food processor, or smash with fork, until soft, mixing in your mayonnaise, salt, pepper, and garlic to taste.
Chill, eat and enjoy.

Does this have a smokey taste?
I actually wrap my aubergines in foil and cook them directly on top of the gas flame. Has a delicious smokey flavor.

I do the same. I never broil it. I cover the stove top with silver foil and place the eggplant on top and let it smoke and the flames lick at the eggplant. voila, we got smokey eggplant. follow chocolate moose's recipe for the rest.

You can add a dash of lemon juice to choco's original recipe.
I remove the skins from the eggplant before blending, add hardboiled eggs and or lots of fried onions, makes for a milder dip - no smokey flavor.

For an interesting twist, try sale & pepper, mayonnaise and scallions. Skip the garlic and see that it has a totally different flavor. Enjoy.

Thank you for the recipe, cm, and tr. Usually I do on the gas flame and peel it, but I did it this way and it was much easier.
Everyone loved it, as much or more than then the other way. I did not put in salt and pepper but I did put in whole garlic cloves.
