I want to make the braised, roasted cabbage from PL+C.
However, I cannot use sesame oil because of allergies in the family.
I don't have sherry --- what can I use as a substitute?
I also don't have ume (not a typo) plum vinegar. I was planning on substituting Apple cider vinegar.
Other ingredients I have for the recipe (it calls for olive oil, fresh garlic, soy sauce, maple syrup).

I just use other red wine.

I said red wine, because when I did buy cooking sherry, I remembered it being a red color. But maybe I’m remembering wrong, because it seems sherry is actually more of a golden color.

I use any red wine. Sometimes it's even what dh makes kiddush on if that's all I have.

I ended up using red wine since Shiraz was all I had.
I also used vinegar and a little broth.
It came out yum!
