We don’t do dips ever. It’s certainly ok to skip for 2 days.

I happen to like mine with honey. But I am going to make a few depths because my husband does not care for honey on it really.

I do find though, in general we don't need as many depths on yom tov as shabbos.

The first dip is in honey. Then we have all regular dips.

OP, have no fear. Dips are a relatively recent invention in most of the Jewish world. Some cultures did chummus, baba ganouj, and techina and some did things like liver. But those mayo based dips certainly were not a thing when I was growing up and much of my adult life. They are definitely a fun addition, but not at all essential to making a nice yontiff.

We do dips. Most people in my home actually don’t like the taste of challah and honey but we eat it for the siman. Then have regular dips after finish with the simanim.

I really dont enjoy sweet bread. I will eat some challah and honey for the siman but I really dont want more then a slice. So dips it is with a less sweet bread option.

Why does it matter? What do you care if he eats dips ? You can eat dips if you want to even if he doesn’t want to .

The whole challah with dips shtick is relatively recent in the US, brought over mainly by people returning from a trip to Israel. It's entirely unnecessary when serving a traditional multiple-course יומטובדיק meal. We never had the custom of dips and still don't except for סעודה שלישית, which is a light meal without a heavy protein course.
