Jazzy potato kugel ideas

I'm looking to make a different kind of potato kugel and I'm thinking to put pastrami or pulled beef (frozen ready made) in the middle. Kind of like yapchik but I don't want to experiment because I'm having guests. I want to know if anyone has tried these or other kinds of fillings and how did it go. Bonus points for a basic recipe

On top or in the mix? The familia (yiddish monthly magazine) has a recipe this month of a layered one.
Bake potato kugel in cookie sheet for a thin kugel and cut in squares. Bake (or cook? I don't remember) the roast and shred, then put a layer on the kugel and top with another potato square and some more pulled beef.

You can also do rolled up - bake thin in cookie sheet, when done put whatever filling you want and roll up jelly roll style. I've only seen with sautéed onions and with farfel, but I'm sure pulled beef would be yum too!

I fries onions and tiny pieces of pastrami and add it as the middle layer (yapchik as you said, but not fatty nor overnight)

Got this recipe from friend recently and its really good. I hope I got it right
5 lb Idaho potatoes
1 onion
about 1/2 c hot oil (put in a pan in the oven)
1 c boiling water
6 eggs
1 1/2 Tbsp kosher salt
pepper to taste

use food processor to shred onion and potatoes
Add hot water and oil. Combined.
Mix spices into eggs and add.
Bake at 500 for and hour. Cover and bake at 350 for 20-30 minutes

I do potato kugel rolled up with sautéed onions & pastrami. delicious, only fresh not rewarmed.

I've made with ground chicken on the bottom, it's delish. Think the recipe was from kosher.com
