Since many are saying Mashgiach sounds perfect, I just want to point out that this position does also require a certain amount of “street smarts”, to look out for any workers trying to “pull the wool” over the Mashgiach’s eyes—ie, get some ingredients past him, etc.
Also, knowledge of ingredients, carton labeling-whether anything looks “off”.
Aside from Yiras Shamayim, a Mashgiach does need to know how to look out for things, and how to read and comprehend well enough to spot problematic ingredients..I’m trying to think what else, but bottom line-he does need certain smarts, though he doesn’t need to be the intellectual sort who did well on tests, necessarily.

OP, what about working as a shomer at a funeral home? Where I live, that job pays pretty well and is hard to fill.

Maybe he could reach out to hiring agency. I see it advertised sometimes. They will ask him what his strengths are and what he's looking to do and set him up with companies looking for workers. Like a shadchan

Not sure if it was mentioned but would he do well with special need kids? They always need men to work with older boys.
He can call SCHI or the special children's center

I know someone who sounds similar to your dh. Not bright but has a heart of gold.
He works with mentally challenged adults in a residential home.

it doesnt pay well by me. my husband did it a few times and it wasnt worth it with him not being home all night. I think he got $90 a night
