I bought a package of Gefen cooked beets on a whim and have no idea what to do with them. Looking for a simple side dish type of recipe. I love beets but never actually cook with them. Thanks!

You can make a beet salad which is same as cucumber salad.

But substitute lemon juice for vinegar

I was going to make beet salad.

But I made life easier and bought one tiny raw beet which I put in my chicken soup. Wink

I roasted mine with oil, salt and pepper.

Same plus garlic powder.

I sometimes make a delicious salad with lettuce or kale, quinoa, roasted beets, string beans, and red onion. With a creamy pesto dressing. Yum.

I love beets I make beet salad a lot. Sometimes I use the more middle eastern spices, lemon juice olive oil. Sometimes I do more asian with soy sauce, sesame oil, rice vinegar. I tend to make stuff up shabbos morning and dont use a recipe but there are so many ideas if you google beet salad recipes.

Cube, add sliced red onion, and toss with a dressing made of 1 tbsp red wine vinegar or lemon juice, 2 tbsp olive oil, salt and pepper to taste (I like a nice amount so I get that sweet salty note.) Optional: garnish with pistachios or scallions before serving.
