Like chocolate moose said, just leave the oil out.
Season a garden salad with lemon juice, garlic powder and salt.
You can use lemon juice, dijon mustard, onion and salt.
Balsamic vinegar, garlic powder and salt...
Do you need actual recipes?

Colorful Cucumber Salad:
8 kirbies, sliced
1 red & 1 green pepper, cut into strips
1 small purple onion, sliced
Dressing:
1/2 cup splenda or sugar
1/4 cup lemon juice
1/4 cup vinegar
salt & pepper, to taste

I use a mixture of fat free plain greek yogurt and lowfat sourcream with lots of dill, parsley, pepper.
