I have raw cut - up beets I would like to use for Shabbos. Any salad type suggestions (please with specific amounts!).? thanks

Instead of boiling, I would wrap the beets in alum foil and roast/bake in the oven till soft.
It's less messy and probably keeps more of nutrients. Depending on how big chunks are/
how much you have, it can take anywhere from 45min to a couple of hours.

The beet salad I made this week was, for 1kg roasted beets (about 2 giant beets).
Once roasted, either grate coarsely or chop into small pieces. For dressing, mix
1tbsp olive oil, juice from 1/2 lemon and 1/2 orange, a bit of salt, and ground cumin (optional).
Let it marinate at least an hour. Looks pretty served with chopped parsley on the top.

You can also cube the cooked beets, and add to regular potato salad with mayo. More Russian style,
looks really pretty as the whole thing gets pink.

Just wrap the beets in alum foil and bake till soft. (that way it doesn't get dried out).
You can do the whole unpeeled beets--easier to peel and chop once it's cooked.

My FIL just made an amazing beet salad the other day. He boiled the beets, cut them into chunks, added small pickled onions, sliced green olives and lightly dressed it with olive oil, salt, vinegar, parsley and dill (he says it's optional LOL )

It was so good!

Just a little warning without being TMI, it makes urine turn reddish. Don't want to worry anyone unnecessarily. My friend once thought she was in niddah and realized later that it was just red from the beets.
