I’ve used various glass jars. Always plastic or glass lids, not metal
I make kimchi. The worse it smells the better it tastes but you have to figure out what you like. I like it repulsive smelling.

The Gefilte Manifesto is a great cookbook that has lots of fermenting tips and recipes in there. I haven't really gotten to the world of fermenting yet though, except for making mustard if that counts. I keep thinking I'll get around to it,

Another great Facebook group for such things: Wild Fermentation. Very knowledgeable group when I left, and the mods are very responsible about not promoting bad fermentation.
Now, Israelis:
Where do you get your jars/cans? I can't find good equipment anywhere!

I make kimchi too!!! But have done it with regular mason jars and metal lids. All the articles I was reading seemed to say it didn’t matter😬 . Going to look into some of these alternatives for next batch.
